French Country Sirloin
- 1 teaspoon olive oil
- 1 1-pound boneless sirloin steak, about
- 1 inch thick, all visible fat discarded, cut into 4 pieces
- 1 teaspoon dried thyme, crumbled
- 1/2 teaspoon dried marjoram, crumbled
- 1/2 teaspoon crushed dried rosemary
- 1/2 teaspoon dried sage
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
- 2 medium Italian plum (Roma) tomatoes, halved lengthwise
- 4 medium green onions
- Preheat the grill on medium high.
- Using your fingertips, rub the oil on both sides of the beef.
- In a small bowl, stir together the thyme, marjoram, rosemary, sage, pepper, and salt.
- Sprinkle over the beef.
- Gently press the mixture so it adheres to the beef.
- Grill the beef, covered, for 6 to 8 minutes on each side, or until the desired doneness.
- After the first 5 minutes, put the tomatoes and green onions on the grill.
- Grill, covered, for 8 to 10 minutes, or until slightly charred, turning several times to cook evenly.
- When the beef is done, transfer to a large plate.
- Cover the plate and set aside.
- When the tomatoes and green onions are done, transfer to a cutting board and coarsely chop.
- Spoon over the beef.
