Mango and rum granita recipe

  1. Carefully remove the flesh from the mango and roughly chop.
  2. Place the chopped mango into a deep bowl.
  3. To the chopped mango, add the zest, lime juice and mint leaves.
  4. Using a hand-blender (or free-standing blender), carefully blitz the ingredients together until the consistency is smooth throughout.
  5. Add the rum, stir, and then add the caster sugar, to taste.
  6. (You may not need to add any at all.)
  7. Pour the mixture into a freezable container and place in the freezer for about 7 hours, until solid.
  8. To serve, remove the granita from the freezer about 5 minutes before serving, to soften a little, then using a fork, continuously scrape away at the surface of the granita until you get a light fluffy texture.
  9. Scoop this into martini glasses, or even shot glasses and garnish with a small mint leave.
  10. Serve immediately.
