sig's Kumara,Potato and roasted Garlic soup.
- 2 medium bulbs (whole heads) of garlic
- 1 tbsp olive oil
- 2 shallots ,finely chopped
- 2 medium about 400 grams old potatoes, .chopped
- 3 medium kumara ( sweet potato ) chopped
- 2 small carrots, chopped
- 1 pinch cayenne pepper
- 1 and a half litre( 6 cups) good vegetable stock
- 1 tbsp finely chopped fresh thyme or half a tablespoon dried thyme
- 1/2 cup (125 ml ) cream
- place the unpeeled whole head of garlic in oven tray and bake on medium heat in oven for about 50 minutes until garlic is soft ,cool cut in half ,squeeze out the garlic.
- The flavour will be wonderfully different to just cooked garlic.
- Heat oil in pan soften the shallots, add all other ingredients, except the thyme and cream .
- Cook for twenty minutes or until all vegetables soft enough to puree in batches until smooth .
- Gently reheat ,add thyme and cream .
- Simmer until heated through.
