sig's Kumara,Potato and roasted Garlic soup.

  1. place the unpeeled whole head of garlic in oven tray and bake on medium heat in oven for about 50 minutes until garlic is soft ,cool cut in half ,squeeze out the garlic.
  2. The flavour will be wonderfully different to just cooked garlic.
  3. Heat oil in pan soften the shallots, add all other ingredients, except the thyme and cream .
  4. Cook for twenty minutes or until all vegetables soft enough to puree in batches until smooth .
  5. Gently reheat ,add thyme and cream .
  6. Simmer until heated through.
