Chicken Avocado Sandwich
- 1 Brioche
- 1 avocado
- 1 slice pepperjack cheese
- 5 oz chicken breast
- 1/2 cup shredded romaine lettuce
- 1/4 cup tomato
- 1/8 cup onion
- 1 1/2 tbsp roasted peppers
- 1 tbsp mayonnaise
- 1/2 tsp garlic powder
- 1/2 tsp dijon mustard
- 1/2 tsp Frank's hot sauce
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1/4 tsp cayenne pepper
- In a frying pan over medium heat, cook chicken breast to 165F.
- Season with cayenne pepper, black pepper, 1/4 tsp salt, and 1/8 tsp garlic powder.
- Peel cut avocado in half, remove pit, and scoop insides out into mixing bowl.
- Add diced tomato, onion, mayonaisse, dijon mustard, roasted peppers, Franks hot sauce, 1/4 tsp garlic powder, and 1/8 tsp salt.
- Mash all together and mix well.
- When chicken breast is cooked, remove from heat, place slice of pepperjack on top, and cover pan.
- Let cheese melt.
- Cut brioche in half, spread avocado mix on bottom bun.
- Place chicken breast in middle with lettuce on top, and close bun.
