Spinach Salad with Hot Bacon Dressing
- 8 cups (1900 ml) spinach
- 2 green onions, chopped
- 1/2 cup (125 ml) slivered almonds
- 4 slices bacon, crumbled
- 1 can mandarin oranges
- 1 egg
- 1/2 cup (125 ml) sugar
- 1/2 cup (125 ml) white vinegar
- 3/4 tsp (4 ml) salt
- 1-1/2 tsp (7 ml) bacon grease
- Beat egg.
- Combine egg,sugar, vinegar, salt and bacon grease in pan.
- Cook over low heat, stirring constantly until mixture reaches boiling point.
- Chill until ready to serve.
- To serve, toss with salad ingredients.
