Cheesy Omelet

  1. Whisk eggs and pepper until blended.
  2. Heat oil in small nonstick skillet on medium-high heat.
  3. Add egg mixture; cook 2 to 3 min.
  4. or until almost set, occasionally lifting edge with spatula and tilting skillet to allow uncooked portion to flow underneath.
  5. Top with cheese; cook until egg mixture is set but top is still slightly moist.
  6. Slip spatula underneath omelet, tip skillet to loosen and gently fold omelet in half.
  7. Cook 1 to 2 min.
  8. Slide or flip onto plate.
  9. Serve with tomatoes.
