Low-Cal Roasted Red Pepper Dip

  1. Blend first 4 ingredients in blender until smooth.
  2. Cut top off red pepper, remove seeds and membrane, wash and dry.
  3. Spoon dip into hollowed red pepper, chill in refrigerator 1 hour.
  4. Serve with cut veggies and crackers for dipping.
