Mini Hawaiian Meatball Subs With Pineapple Coleslaw

  1. Add meatballs, pineapple in juice, BBQ sauce and brown sugar seasoning to a medium saucepan over medium heat.
  2. Cook until warmed through, about 15-17 minutes.
  3. In a medium bowl mix coleslaw, pineapple (no juice,) mayo, and sugar.
  4. Refrigerate until ready to use.
  5. Preheat oven to 375 degrees.
  6. Open all of the mini sub rolls and arrange on a baking sheet (insides up.)
  7. Put a half slice of cheese on all of the "tops."
  8. Bake for 3-4 minutes or until cheese starts to melt and rolls start to crisp.
  9. Build the subs: Add 3-4 meatballs to each "bottom" of the sub.
  10. Next, add 2-3 tbs slaw and the "top" of the sub.
  11. Enjoy.
