AMIEs PASTA with AVOCADO & TUNA
- 1 avocado, peeled and diced
- 2 large ripe tomatoe, chopped in cubes
- 1 lime, juiced
- 180 grams tuna, drained
- 1 small onion, sliced
- 1 tbsp origano
- 1 extra virgin olive oil
- 1 salt and fresh ground pepper
- 1 tabasco, if desired
- 320 grams pasta, conchiglie or orecchiete
- Mix avocado, tomatoes and lime juice in a separate bowl and toss to combine.
- Set aside.
- Cook the pasta according to the packet directions or until al dente.
- Drain and put in a large serving bowl.
- Put olive oil over the pasta.
- Mix it well.
- Pour all the ingredients over the pasta.
- Whisk olive oil.
- Season with salt, origano and pepper.
- Gently toss until evenly coated.
- If desired, you can whisk tabasco.
- Serve and enjoy!
