White Bean and Potato Stew
- 2 tablespoons olive oil
- 7 ounces smoked sausage (I prefer the spicy kind)
- 1 medium onion, chopped
- 2 (15 ounce) cans great northern beans (white beans)
- 1 large baking potato
- 6 -7 cups vegetable stock or 6 -7 cups broth
- 1 teaspoon cumin
- 1 teaspoon coriander
- salt
- pepper
- chop sausage into small pieces.
- I usually slice them then cut into quarters.
- heat oil on medium heat in large pot.
- add sausage and cook until brown, about 5 minutes.
- add onion, cook another 5 minutes.
- add cumin and coriander, make sure to stir well.
- meanwhile drain liquid from bean.
- add stock or broth to pot, let come to a boil.
- add beans and turn down to a simmer.
- peel potato and cut into small cubes.
- add potato to pot and let simmer for 30 minutes.
- add salt and pepper to taste.
- enjoy!
