Super Molasses -Ginger Cookies
- 1 cup unsifted white flour
- 1 cup stirred soy flour
- 1 12 teaspoons ground ginger
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 12 teaspoon salt
- 12 cup unsalted butter
- 14 cup shortening
- 1 cup sugar
- 1 large egg
- 13 cup light molasses
- Stir together flour, soy flour, ginger, baking soda, cinnamon, and salt; set aside.
- Cream together butter, shortening and 1 cup sugar in bowl until light and fluffy, using electric mixer at medium speed.
- Beat in egg and molasses.
- Stir dry ingredients into creamed mixture, mixing well.
- cover and chill in refrigerator at least 1 hour.
- Shape dough into 1 inch balls.
- Roll each in sugar.
- Place balls about 2 inches apart on greased baking sheets.
- Bake in 375 degree oven for 10-12 minutes, or until lightly browned.
- Makes 4 dozen.
