Almond and Coffee Bowls

  1. Combine coffee, water and caster sugar over medium heat until dissolved.
  2. Bring to the boil, reduce heat and simmer for 5 minutes or until slightly syrupy.
  3. Allow to cool.
  4. Scoop the ice-cream into four individual serving dishes and drizzle with coffee syrup.
  5. Sprinkle generously with crushed amaretto biscuits, and serve immediately.
