Almond and Coffee Bowls
- 1 tablespoon instant coffee
- 1/4 cup water
- 1/4 cup caster sugar
- 4 large scoops vanilla ice-cream
- 125g packet Amaretto biscuits, crushed
- Combine coffee, water and caster sugar over medium heat until dissolved.
- Bring to the boil, reduce heat and simmer for 5 minutes or until slightly syrupy.
- Allow to cool.
- Scoop the ice-cream into four individual serving dishes and drizzle with coffee syrup.
- Sprinkle generously with crushed amaretto biscuits, and serve immediately.
