Best Ever Enchiladas Recipe
- 1 pound grnd beef
- 1 lg. minced onion
- 1 1/2 tbsp. all-purpose flour
- 1 tbsp. chili pwdr
- 1 teaspoon garlic pwdr
- 3/4 teaspoon salt
- 1/4 teaspoon grnd cumin
- 1/4 teaspoon rubbed sage
- 1 (16 ounce.) can undrained stewed tomatoes
- 12 corn tortillas
- 1/4 c. vegetable oil
- 1 minced med. onion
- 1/2 c. sliced olives
- 2 c. shredded Monterey Jack cheese
- Cook grnd beef and large onion in a large skillet till meat is browned, stirring to crumble meat; drain.
- Add in flour, seasonings and stir 1 minute.
- Stir in tomatoes; cook till heated.
- At 3 to 5 seconds fry tortillas, one at a time, and add in oil; drain tortillas on paper towels.
- Combine medium onions and olives; sprinkle over tortillas.
- Spoon 2 Tbsp.
- meat filling on each tortilla; roll tightly and place a 13x9x2 inch baking dish.
- Pour enchilada sauce over tortillas; bake at 350 degrees for 15 min.
- Sprinkle with cheese; bake 5 more min and your ready to serve.
