Delish Oatmeal Chocolate Chip Cookies

  1. Preheat oven to 375
  2. combine flour, baking soda, salt and cinnamon in small bowl.
  3. Beat coconut oil (OR butter/margarine), granulated sugar, brown sugar, eggs and vanilla extract in large bowl.
  4. Gradually beat in flour mixture.
  5. Stir in oats and chips.
  6. Drop by rounded tablespoon (I like using an ice cream scoop for this, if accessible) onto ungreased baking sheet(s).
  7. Bake for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies.
  8. Cool on baking sheet for 2 minutes.
  9. PAN COOKIE VARIATION: Grease 15x10-inch jelly-roll pan Prepare dough as above.
  10. Spread into prepared pan.
  11. Bake for 18 to 22 minutes or until light brown.
  12. Cool completely in pan on wire rack.
  13. Makes 4 dozen bars.
  14. *feel free to use butterscotch chips, peanut butter chips, cinnamon chips, raisins, etc.
