Amish Oatmeal Cookies Recipe
- 1 c. raisins
- 1/3 c. peanuts
- 2 c. all-purpose flour
- 2 tsp baking pwdr
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/2 c. shortening
- 1 c. sugar
- 3/4 x to 1 c. raw oatmeal
- 2 tsp baking soda
- 1/3 c. sour lowfat milk, add in 1 Tbsp. lemon juice to 1/3 c. lowfat milk, let sit while making cookies
- 3 Tbsp. dark molasses
- 1 x egg, beaten
- 1 x egg, for topping
- Grind raisins and peanuts.
- Combine flour, baking pwdr, spices and salt; cut in shortening.
- Add in sugar, oatmeal, raisins and peanuts; mix well.
- Dissolve baking soda in sour lowfat milk; add in to dry ingredients.
- Combine and add in molasses and 1 beaten egg.
- Chill 1 hour.
- Shape dough into walnut-size balls on greased cookie sheet.
- Press down slightly with fork.
- Beat 1 egg and paint tops of the cookies.
- Bake in preheated 375 degree oven for 15 min or possibly till golden.
- Makes about 8 dozen.
