Nut Loaves With Bittersweet Glaze
- 2 14 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter or 1 cup margarine
- 2 cups sugar
- 5 eggs
- 3 unsweetened chocolate squares, melted and cooled
- 1 cup buttermilk or 1 cup sour milk
- 2 teaspoons vanilla
- 1 cup finely chopped nuts, reserve some for garnish, if desired

- 2 tablespoons butter or 2 tablespoons margarine
- 1 dash salt
- 1 34 cups confectioners' sugar
- 3 tablespoons water, hot but not boiling
- LOAVES:.
- Prepare 2 9x5-inch loaf pans by greasing and flouring.
- Set aside.
- Preheat oven to 350F.
- In medium bowl mix together flour, soda, and salt.
- In large mixing bowl, cream butter.
- Gradually beat in sugar; beat until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Blend in chocolate.
- Alternately add flour mixture and buttermilk, beating after each addition.
- Mix in vanilla and nuts.
- Pour into prepared loaf pans and bake for about 60 minutes, or until cake tester inserted in centers comes out clean.
- Cool 10 minutes; remove from pans and finish cooling on racks.
- BITTERSWEET GLAZE:.
- Melt chocolate with butter in saucepan over very low heat, stirring constantly until smooth.
- Remove from heat and add salt.
- Alternately add sugar with water until of spreading consistency.
- Top loaves with glaze.
- Garnish with chopped nuts, if desired.
