Tuna-Licious Pasta
- 2 tablespoons olive oil
- 1 small onion, chopped
- 4 garlic cloves, minced
- 12 teaspoon dried Italian seasoning
- 14 teaspoon hot pepper flakes
- 10 ounces frozen spinach, thawed, squeezed dry and chopped
- 28 ounces stewed tomatoes
- 14 cup oil-cured olives, pitted and chopped
- 2 tablespoons capers, rinsed and drained
- 15 ounces tuna, drained and broken into chunks
- 12 ounces spaghetti
- parmesan cheese, grated (optional)
- In a large skillet, heat the oil over medium heat.
- Cook the onion, garlic, Italian seasoning and hot pepper flakes for 5 minutes or until softened.
- Add the spinach and tomatoes, breaking up the tomatoes with the back of a spoon.
- Add the olives and capers and bring to a boil.
- Reduce the heat and simmer for about 10 minutes or until thickened.
- Stir in the tuna.
- Meanwhile, in a large pot of boiling salted water, cook the pasta for 8 to 10 minutes or until tender but firm.
- Drain and return to the pot.
- Add the sauce and toss to coat.
- Serve sprinkled with cheese (if using).
