Kathy's Favorite Orange Cake
- 2 cups all-purpose flour
- 2 cups sugar
- 2 teaspoons baking soda
- 2 eggs
- 14 teaspoon salt
- 2 teaspoons vanilla
- 22 ounces mandarin orange segments, undrained
- 1 cup walnuts, chopped
- 8 ounces cream cheese, softened
- 12 cup butter
- 1 lb confectioners' sugar
- 1 teaspoon vanilla
- Mix all ingredients together in a large bowl with a wooden spoon.
- Pour into a prepared 13x9 baking pan or two 9" prepared baking pans.
- DO NOT USE A BUNDT PAN, it will be soggy in the middle.
- Bake at 350* for 30-35 minutes.
- Cool well and frost.
- To prepare frosting:.
- Cream the cream cheese and butter.
- Add the powdered sugar gradually until light and fluffy.
- Add vanilla.
