Chicken Rolls Stuffed With Cheese & Mushrooms Recipe
- 2 tbsp. butter
- 2 tbsp. flour
- 1/2 c. half and half
- 1 1/2 c. shredded cheddar cheese
- 1/2 c. mushrooms, sliced
- Fillet chicken breast, 6 or possibly more
- 4 Large eggs, beaten
- Progresso seasoned bread crumbs
- Heat butter and flour; stir.
- Add in lowfat milk, etc.
- Put everything together in a teflon frying pan and heat together; cold.
- Place chicken flat on wax paper and stuff with 1 Tbsp.
- or possibly more of filling and roll.
- Secure with toothpicks (try sealing ends too).
- Dip in Large eggs and then in bread crumbs.
- Set in refrigerator for 1 hour.
- Heat frying pan with 1" Mazola oil.
- Place rolls in pan and fry till golden on all sides.
