Heart-Friendly Vinaigrette
- 1 bulb of garlic, separated and peeled
- 12 cup water
- 1 tablespoon red wine vinegar
- 14 teaspoon honey
- 1 tablespoon virgin olive oil
- 14 teaspoon black pepper
- Place garlic in pan and cover with water (about 1/2 c.) Bring to boil, reduce heat and simmer until garlic is tender - about 15 minute.
- Reduce liquid to 2 T and increase heat for 3 minute
- Pour through sieve into bowl and press garlic through, mashing, with wooden spoon.
- Whisk in vinegar and add oil.
