Ham and Bean Pasta Salad
- 12 lb ham
- 16 ounces pasta
- 1 bunch asparagus
- 2 bell peppers, thinly sliced
- 24 ounces great northern beans, drained and rinsed
- 12 cup olive oil
- 14 cup red wine vinegar
- 1 teaspoon salt
- 14 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- Preheat oven to 425 degrees.
- On a large baking sheet, toss the bell pepper slices and asparagus with 2 tablespoons of olive oil.
- Season with salt and pepper.
- Roast for 10-15 minutes, stirring once during roasting.
- Boil the pasta in a large pot with salted water until cooked, about 10 minutes.
- Drain and add to large bowl along with ham and beans.
- Make the dressing by whisking 1/2 cup of olive oil, red wine vinegar, salt, pepper and parsley together.
- When vegetables have cooled to the touch, chop into smaller pieces and add to the bowl with the pasta, ham and beans.
- Pour the dressing on top and stir together.
- Serve warm or refrigerate and serve cold.
