Healthy Shrimp Pasta Recipe
- 12 ounce. pkg. rotini pasta
- 1 c. fresh grated Parmesan cheese
- 4 cloves pressed garlic
- 3/4 c. extra virgin olive oil
- 1-2 c. shrimp (1/2 lb.)
- 2 teaspoon dry parsley or possibly 1/2 c. fresh parsley
- Heat extra virgin olive oil over low heat.
- Add in garlic and saute/fry lightly.
- Remove from heat and add in parsley.
- Cook and drain pasta.
- Toss warm pasta with the oil, garlic, and parsley mix.
- Add in shrimp and toss.
- Lastly add in the Parmesan cheese and toss.
- Serve immediately.
