Lime and Cottage Cheese Loaf
- 3 ounces lime gelatin
- 18 teaspoon pepper
- 1 cup boiling water
- 1 medium size cucumber
- 1 cup cream cottage cheese
- 12 cup mayonnaise
- 13 cup sliced ripe olives
- 2 teaspoons grated onions
- 12 teaspoon salt
- 3 ounces cream cheese, softened
- 1 tablespoon salad dressing
- 34 teaspoon grated onion
- 18 teaspoon salt
- Set out a 9x5x3-inch loaf pan.
- Add and stir till dissolved, boiling water to gelatin.
- Cool; chill till mixture is slightly thicker than unbeaten egg white.
- Rinse and pare cucumber, cut into halves lengthwise, discard seeds.
- Dice the cucumber (1 cup diced).
- Mix with cottage cheese, mayonnaise, olives, onion and seasonings.
- Blend in mixture in gelatin.
- Turn into pan.
- Chill mixture till firm.
- Unmold on chilled plate.
- Cream Cheese Topping: Mix 4 ingredients; spread over top of unmoulded salad.
