More Rice! Chicken Simmered with Grated Daikon Radish
- 1 Chicken thigh or breast meat
- 15 cm Daikon radish
- 1 Japanese leek (white part)
- 1 tbsp Sesame oil
- 3 tbsp Soy sauce
- 1 tsp Sugar
- Cut the leek into small bite-sized pieces.
- Grate the daikon radish.
- Combine the grated daikon radish with the cut leek, sesame oil, soy sauce, and sugar and mix.
- Let the chicken soak in this mixture for about 30 minutes.
- Remove the chicken from the mixture and rinse clean.
- Coat a pan with vegetable oil (not listed) and cook both sides of the chicken until lightly golden brown.
- Add grated daikon radish and the mixture and cook on low heat for 15 minutes (Check the taste midway and if it's too weak, add soy sauce.)
