Apple Cake
- 3 whole Eggs
- 5-13 ounces, weight Gluten Free Self Raising Flour
- 3-58 ounces, weight Sugar
- 2- 1/2 ounces, weight Butter
- 1 container Yogurt
- 3 whole Granny Smith Apples, Cored And Peeled
- 1-78 ounces, weight Almond Meal
- 1 teaspoon Grated Lemon Rind
- 1 pinch Salt
- Cream the butter with the sugar.
- Incorporate one egg at a time, then mix in the yogurt (plain or any flavour you like) and the two flours mixed with the grated lemon peel.
- Mix well.
- Slice the apple thinly.
- Butter and flour a 26cm cake tin.
- Pour in half of the cake mixture.
- Add half of the sliced apples, then top with the remaining cake mix.
- Place the rest of the apple slices on top.
- Cook in a preheated oven (180C or 355F) for 40 to 50 minutes
- Hint: to save time, you can use a food processor!
