Turkey and Black Bean Burrito
- 1 pound Lean Ground Turkey
- 1/2 teaspoons Ground Black Pepper
- 1/2 Tablespoons Hot Pepper Sauce
- 1 Tablespoon Grapeseed Oil
- 1/4 cups Red Onion, Diced
- 1 can (15 Oz. Size) Black Beans, Undrained
- 1/4 cups Tomato, Diced
- 1/4 cups Red Bell Pepper, Diced
- Salt To Taste
- 2 Tablespoons Red Wine Vinegar
- 1/2 Tablespoons Stone Ground Mustard
- 2 Tablespoons Cilantro, Finely Chopped
- 1 Tablespoon Parsley, Finely Chopped
- 4 Flour Tortillas
- 1/2 cups Sour Cream, To Serve (optional)
- Shredded Cheese, To Serve (optional)

- Heat a large skillet over medium-high heat.
- Add turkey, pepper, and hot sauce.
- Cook about 6 to 7 minutes or until browned, stirring regularly and breaking up meat.
- Drain the fat from the pan, place cooked turkey on paper towels and set aside.

- Return the skillet to medium-high heat, add the oil and onions, and cook, stirring continuously, until onions are translucent.
- Reduce heat, add beans, tomatoes, peppers and salt, and cook until peppers are soft, about 10 minutes.
- Add vinegar, mustard, cilantro, parsley, and cooked turkey; heat for 2 to 3 minutes more.

- To build a burrito, place 1 tortilla on each of 4 serving plates.
- Divide turkey mixture evenly among tortillas.
- Top with sour cream and cheese, fold and enjoy.
