Apricot-Chicken Pot Stickers

  1. Bring 2 cups water to boil in medium saucepan.
  2. Add chicken.
  3. Reduce heat to low; simmer, covered, 10 minutes or until chicken is no longer pink in center.
  4. Remove from saucepan; drain.
  5. Add cabbage and remaining 1 tablespoon water to saucepan.
  6. Cook over high heat 1 to 2 minutes or until water evaporates, stirring occasionally.
  7. Remove from heat; cool slightly.
  8. Finely chop chicken.
  9. Add to saucepan along with preserves, green onions, soy sauce, ginger and pepper; mix well.
  10. To assemble pot stickers, remove 3 wonton wrappers at a time from package.
  11. Spoon slightly rounded tablespoonful of chicken mixture onto center of each wrapper; brush edges with water.
  12. Bring 4 corners together; press to seal.
  13. Repeat with remaining wrappers and filling.
  14. Spray steamer with nonstick cooking spray.
  15. Assemble steamer so that water is 1/2 inch below steamer basket.
  16. Fill steamer basket with pot stickers, leaving enough space between them to prevent sticking.
  17. Cover; steam 5 minutes.
  18. Transfer pot stickers to serving plate.
  19. Serve with prepared sweet & sour sauce, if desired.
