Almond Potato Cake

  1. Boil water and salt.
  2. remove from heat and stir in potatoes.
  3. cool.
  4. cream butter and sugar until light.
  5. beat in eggs one at a time, then almond extract, almonds and cooled potatoes.
  6. Turn into a greased and floured 8 inch square baking pan.
  7. Bake 350F (180C) F for 50 minutes or tested done.
  8. Cool in pan 10 minutes.
  9. Remove from pan and cool completely.
  10. Sprinkle with powdered sugar.
  11. serve a custard sauce on the side.
