Spiced Tomato Jam

  1. Use a 6-8 quart sauce pan.
  2. Scald, peel and chop tomatoes and simmer 10 minutes.
  3. Measure, you should have 3 cups.
  4. Add lemon rind, lemon juice, allspice, cinnamon, cloves and sure-jell.
  5. Cook over high heat until mixture comes to a hard boil.
  6. At once add sugar, bring to a full rolling boil (a boil that cannot be stirred down).
  7. Boil hard 1 minute, stirring constantly.
  8. Remove from heat, skim off foam with metal spoon.
  9. Ladle into hot, sterilized jars, leaving 1/4-inch space at top.
  10. Process in boiling water bath for 15 minutes.
  11. After 1/2 hour, shake to avoid floating fruit.
  12. Store in cool place.
