Spaghettini With Parsley Pesto and Walnuts
- 1 lb spaghettini (I prefer whole wheat)
- 4 cups Italian parsley
- 12 cup olive oil
- 23 cup lemon juice
- 3 -5 minced garlic cloves
- 1 cup grated parmesan cheese
- 1 medium cucumber, unpeeled, seeded, diced
- 34 cup chopped walnuts
- Cook pasta.
- Put parsley, olive oil, lemon juice, garlic, parmesan, and salt&pepper to taste in a food processor and blend.
- In a large bowl, mix together pasta, pesto, cucumbers and walnuts.
