Jamaican Chicken Stew

  1. Season the chicken with 2 1/2 teaspoons salt and 1 teaspoon pepper.
  2. In a large heavy pot, heat the oil over medium high heat until hot, then brown the chicken in batches, about 6 minutes per batch.
  3. Transfer the the to a platter as browned.
  4. Add the onion, garlic and ginger to the pot and cook, stirring occasionally, until golden, 5 to 7 minutes.
  5. Stir in the carrots, potatoes, cabbage, bay leaves, Scotch bonnet pepper, thyme, water and worcestershire.
  6. Add the chicken and any accumulated juices back to the pot and cover.
  7. Simmer the stew until the chicken is very tender, about 1 hour.
  8. Season with salt and pepper to taste.
  9. Serve with cooked rice.
