Broccamole

  1. In a large food processor, combine steamed broccoli, avocado, lime juice, sour cream, salt and cilantro until a smooth puree is formed.
  2. Spoon mixture into a bowl and fold in chopped roasted red peppers, onions, and corn.
  3. Serve with pita chips or tortilla chips.
  4. Will keep in an airtight container in refrigerator for ~2 days.
  5. Nutrition info per 1/4 cup: 68 calories, 4 g fat, 2 g protein, 5 g carbohydrates, 1.8 g fiber, 255 mg sodium
