Split Pea and Ham Soup

  1. Soak and rinse peas 20 mins.
  2. In 6 qt pot, combine water, broth and peas; bring to boil.
  3. Add ham bone, carrots, celery, leek, tarragon and 1T parsley.
  4. Reduce heat to med low; simmer, partially covered, stirring occasionally, 1 hr.
  5. Remove from heat.
  6. Remove meat from bone; shred.
  7. Remove excess fat and return meat to pot.
  8. Add sherry, pepper and remaining 2T parsley.
  9. Heat.
