Kidney Bean Salsa
- 1 14 cups cooked drained kidney beans
- 13 cup grilled corn kernel
- 14 cup chopped cherry tomatoes
- 2 tablespoons finely diced sweet onions
- 1 tablespoon thinly sliced green onion
- 3 tablespoons sherry wine vinegar
- 2 tablespoons olive oil
- 1 tablespoon grainy mustard
- 1 teaspoon herbes de provence
- 12 teaspoon salt
- 14 teaspoon pepper
- In a bowl, combine beans and vegetables.
- Whisk together vinaigrette ingredients and mix into beans.
