Cucumber-Sour Cream Salad

  1. Mix dry gelatin mix and salt in large bowl.
  2. Gradually add hot water, stirring constantly until gelatin is dissolved.
  3. Stir in lime zest and juice.
  4. Refrigerate 1-1/2 hours or until slightly thickened (consistency of unbeaten egg whites).
  5. Add sour cream and mayonnaise; mix well.
  6. Stir in remaining ingredients.
  7. Pour evenly into eight 5-cup molds (or into one 5-cup mold for trial recipe) sprayed with cooking spray.
  8. Refrigerate several hours or until firm.
  9. Unmold as needed just before serving.
