Cucumber-Sour Cream Salad
- 1-1/2 qt. JELL-O Lime Flavor Gelatin
- 4 tsp. salt
- 1-1/2 gal. hot water (160 degrees F to 180 degrees F)
- 1/2 cup lime zest, grated Safeway 3 ct For $1.00 thru 02/09
- 1/2 cup fresh lime juice Safeway 3 ct For $1.00 thru 02/09
- 1 qt. sour cream
- 1 pouch KRAFT Extra Heavy Mayonnaise
- 3 qt. seedless cucumbers, chopped
- 1 cup onions, finely chopped Safeway 3 lb For $2.99 thru 02/09
- 1/2 cup fresh mint, chopped
- Mix dry gelatin mix and salt in large bowl.
- Gradually add hot water, stirring constantly until gelatin is dissolved.
- Stir in lime zest and juice.
- Refrigerate 1-1/2 hours or until slightly thickened (consistency of unbeaten egg whites).
- Add sour cream and mayonnaise; mix well.
- Stir in remaining ingredients.
- Pour evenly into eight 5-cup molds (or into one 5-cup mold for trial recipe) sprayed with cooking spray.
- Refrigerate several hours or until firm.
- Unmold as needed just before serving.
