Mexican Corn Bread
- 2 stick butter
- 3/4 cup sugar
- 4 eggs
- 1 cup cheddar cheese (shredded)
- 4 oz can diced green chili's
- 1 cup flour
- 1 cup cornmeal
- 1 16 ounce can creamed corn
- 1/4 tsp salt
- 4 tsp baking powder
- Cream the butter and sugar together
- Beat in the eggs.
- Add the cheese and green chili's.
- Stir in the flour, cornmeal, creamed corn, salt and baking powder.
- Bake at 350 for 50 minutes or until done.
- It should be golden brown and a toothpick should come out clean.
- I use a 12" cast iron pan for this recipe.
- I also use a little more sugar to sweeten it up.
