Boston Baked Beans A La Marie Recipe
- 2 1/2 c. great northern beans
- 1/4 pound lean salt pork, cut in chunks
- 1 sm. onion, diced
- 1/2 c. dark molasses
- 2 tbsp. dry mustard
- 3 tbsp. brown sugar
- Cover beans with cool water and soak overnight.
- Rinse beans well; cover with 2 inches water and bring to a boil.
- Lower heat and simmer till beans are tender but not mushy (about 20-30 min).
- Drain, reserving bean water.
- Put beans in bean spot; add in salt pork and onion.
- Mix together molasses, brown sugar, and dry mustard, and combine with beans in pot.
- Stir.
- Add in reserved bean water and fresh water as necessary to cover beans.
- Cover beans pot and cook in 275 degree oven for 6-8 hrs.
- Stir occasionally and add in water if needed to prevent beans from drying out.
- Serve with brown bread and cole slaw.
