Shredded Pork Tacos
- 3 tbsp. fresh lime juice
- 2 tbsp. olive oil
- 2 tsp. hot Mexican chili powder
- 1/4 tsp. ground cumin
- 1/4 tsp. minced garlic
- 1 can black beans
- 1 can Mexican-style kernel corn
- 1 1/2 c. julienned peeled jicama
- 1 ripe Hass avocado
- 2 scallions
- 2 tbsp. Chopped cilantro
- 3/4 lb. roasted pork loin
- 3/4 c. green tomatillo salsa
- 1 plum tomato
- 1/4 tsp. Freshly ground pepper
- 8 crisp yellow corn taco shells
- 1 1/2 c. shredded iceburg lettuce
- Black Bean-Jicama Salad: In a bowl whisk lime juice, oil, chili powder, cumin and garlic.
- Toss with remaining salad ingredients.
- Tacos: In a bowl, mix pork, salsa, tomato, cilantro and pepper.
- Fill taco shells with lettuce, then top with pork mixture.
- Serve with salad.
