Pumpkin Pancakes

  1. Heat lightly greased skillet on medium-low heat or lightly greased electric griddle to 375F.
  2. Prepare pancake batter as directed on package using the 1 cup pancake mix.
  3. Add 1/2 cup of the canned pumpkin, the pecans and brown sugar; mix well.
  4. Ladle batter into prepared skillet, using 1/4 cup of the batter for each pancake.
  5. Cook until bubbles form on top, then turn to brown other sides.
  6. Gently stir whipped topping into remaining 1/4 cup canned pumpkin until well blended.
  7. Serve with the pancakes.
