Pumpkin Pancakes
- 1 cup pancake mix
- 3/4 cup canned pumpkin, divided
- 1/2 cup PLANTERS Pecan Pieces
- 2 Tbsp. brown sugar
- 1/2 cup thawed COOL WHIP Whipped Topping
- Heat lightly greased skillet on medium-low heat or lightly greased electric griddle to 375F.
- Prepare pancake batter as directed on package using the 1 cup pancake mix.
- Add 1/2 cup of the canned pumpkin, the pecans and brown sugar; mix well.
- Ladle batter into prepared skillet, using 1/4 cup of the batter for each pancake.
- Cook until bubbles form on top, then turn to brown other sides.
- Gently stir whipped topping into remaining 1/4 cup canned pumpkin until well blended.
- Serve with the pancakes.
