Barbara's Fruit Roll
- 1 lb marshmallows
- 2 (14 ounce) boxescrushed graham crackers
- 34 cup chopped candied red cherries
- 34 cup chopped candied pineapple
- 1 lb chopped dates
- 12 cup apricot brandy
- 12 cup whipping cream
- 1 lb coconut
- 3 cups chopped pecans
- 1 12 cups ground pecans
- Melt marshmallows.
- (I use the microwave).
- In a large bowl, combine melted marshmallows, graham cracker crumbs, whipping cream, and brandy.
- Stir in coconut.
- Stir in fruit and chopped pecans, reserving ground pecans for later.
- You will need to mix with your hands.
- Mix well.
- Shape into 6 inch rolls.
- Roll in ground pecans.
- Wrap in waxed paper; slide into ziplock bags.
- Refrigerate.
- Rolls will keep in refrigerator for several weeks.
