Baked Funfetti Protein Oatmeal Cups
- 1 Egg Yolk
- 23 cups Unsweetened Vanilla Almond Milk
- 1/4 cups Fat Free Vanilla Greek Yogurt
- 3/4 teaspoons Vanilla Extract
- 1 cup Rolled, Old Fashioned Oatmeal
- 1/2 teaspoons Baking Powder
- 2 teaspoons Cinnamon
- 2 Tablespoons Truvia
- 2 Tablespoons Sprinkles
- 5 Tablespoons Vanilla Whey Protein Powder, To Taste **
- 1/4 cups Plus 2 Tablespoons Fat-free Vanilla Greek Yogurt

- Preheat your oven to 350 F and spray 5 holes in a standard size muffin tin with cooking spray.

- In a large bowl, whisk together the egg yolk, almond milk, Greek yogurt and vanilla extract until smooth and lump-free.

- Add the oats, baking powder, cinnamon, Truvia and sprinkles and stir until well combined.
- 4.
- Divide the mixture between the 5 muffin cavities, filling each just over 3/4 of the way full.
- Bake until a toothpick inserted in the center comes out clean, about 30-32 minutes.
- Remove from oven.
- Let muffins cool in the pan for 15 minutes and then transfer to a cooling rack to cool completely.
- 5.
- Once cool, stir together the frosting ingredients and spoon onto the cupcakes!

- Devour!

- I havent tried it, but you could probably use honey, agave, or your sweetener of choice here.
- Just taste as you add, to desired sweetness.
- 2.
- The more protein powder you use, the thicker the frosting.
- So, taste as you go until you get the desired taste/texture!
