Baked Funfetti Protein Oatmeal Cups

  2. Preheat your oven to 350 F and spray 5 holes in a standard size muffin tin with cooking spray.

  4. In a large bowl, whisk together the egg yolk, almond milk, Greek yogurt and vanilla extract until smooth and lump-free.

  6. Add the oats, baking powder, cinnamon, Truvia and sprinkles and stir until well combined.

  8. Divide the mixture between the 5 muffin cavities, filling each just over 3/4 of the way full.
  9. Bake until a toothpick inserted in the center comes out clean, about 30-32 minutes.
  10. Remove from oven.
  11. Let muffins cool in the pan for 15 minutes and then transfer to a cooling rack to cool completely.

  13. Once cool, stir together the frosting ingredients and spoon onto the cupcakes!

  15. Devour!

  17. I havent tried it, but you could probably use honey, agave, or your sweetener of choice here.
  18. Just taste as you add, to desired sweetness.

  20. The more protein powder you use, the thicker the frosting.
  21. So, taste as you go until you get the desired taste/texture!
