Poke Cupcakes

  1. Prepare cake batter and bake as directed on package for 24 cupcakes.
  2. Cool in pans 10 min.
  3. Pierce tops with fork.
  4. Add boiling water to jelly powder in small bowl; stir 2 min.
  5. until completely dissolved.
  6. Spoon over cupcakes.
  7. Refrigerate 30 min.
  8. Remove cupcakes from pans.
  9. Tint Cool Whip with food colouring; spread over cupcakes.
  10. Decorate as desired.
