Poke Cupcakes
- 1 pkg. (2-layer size) white cake mix
- 1 cup boiling water
- 1 pkg. (4-serving size) Jell-O Jelly Powder, any red flavour
- 1 tub (1 L) Cool Whip Whipped Topping, thawed
- red or green food colouring
- suggested decorations: coloured sugar, coloured sprinkles, crushed candy canes and/or JET-PUFFED Fruit Flavoured Mini Marshmallows
- Prepare cake batter and bake as directed on package for 24 cupcakes.
- Cool in pans 10 min.
- Pierce tops with fork.
- Add boiling water to jelly powder in small bowl; stir 2 min.
- until completely dissolved.
- Spoon over cupcakes.
- Refrigerate 30 min.
- Remove cupcakes from pans.
- Tint Cool Whip with food colouring; spread over cupcakes.
- Decorate as desired.
