Grilled Vegetable Kabob Salad
- 1 small , cut into 1-inch chunks
- 1 small red pepper, cut into 1-inch chunks
- 1 pkg. (6 oz.) button mushrooms, cleaned
- 1 small yellow squash, cut into 1/2-inch slices
- 1 small onion, cut into 1/4-inch wedges Safeway 1 lb For $1.49 thru 02/09
- 3/4 cup KRAFT Light Red Wine Vinaigrette Dressing
- 8 cups torn
- Arrange vegetables alternately on 12 small skewers; place in large shallow pan.
- Pour dressing over kabobs; turn to coat.
- Let stand 30 minutes to marinate.
- Remove kabobs from dressing; reserve dressing.
- Place kabobs on grill over medium-hot coals.
- Grill 6 to 8 minutes or until vegetables are tender, turning occasionally and brushing with reserved dressing.
- Place greens on 6 individual plates; top each with 2 kabobs.
