Apple Fritters
- 2 Tablespoons Olive Oil, For Frying (adjust As Needed)
- 1/4 cups Coconut Flour
- 1/4 cups Arrowroot Powder
- 1/4 teaspoons Celtic Sea Salt
- 3 whole Eggs, Whisked
- 1/4 cups Maple Syrup
- 1 whole Large Apple, Peeled, Cored And Sliced Into 1/4-inch Rings
- Heat 2 inches of oil in a frying pan or pot over medium heat.
- In a medium bowl, combine coconut flour, arrowroot and salt.
- Mix in eggs and maple syrup.
- Dip apple rings in batter.
- Once oil is hot, fry apples in small batches, about 2 minutes per side.
- Transfer the cooked fritters to a paper towel lined tray and repeat frying the rest.
- Serve with ice cream and cinnamon sugar.
