Apple Fritters

  1. Heat 2 inches of oil in a frying pan or pot over medium heat.
  2. In a medium bowl, combine coconut flour, arrowroot and salt.
  3. Mix in eggs and maple syrup.
  4. Dip apple rings in batter.
  5. Once oil is hot, fry apples in small batches, about 2 minutes per side.
  6. Transfer the cooked fritters to a paper towel lined tray and repeat frying the rest.
  7. Serve with ice cream and cinnamon sugar.
