Okara Cup Cakes with Matcha and Cinnamon
- 50 grams Fresh okara
- 10 grams Rice flour
- 1 dash Salt
- 10 grams Sugar (made with beet sugar)
- 1/2 tsp Matcha
- 1/4 tsp Cinnamon
- 60 grams Soy milk (or milk)
- 1/2 tsp Baking powder
- 1 Boiled azuki beans or Amanatto
- Preheat the oven to 170C.
- (Line the muffin cups with heat resistant paper molds so that it will be easier to take out from the muffin cups.)
- Put all ingredients in a bowl in order on the ingredients list and mix well using a spoon.
- Then add soy milk and continue mixing.
- Sprinkle in baking powder and mix well.
- Pour the mixture in the muffin cups.
- Top with the additional ingredients if you like.
- Bake in the oven for 20 minutes.
- Let it sit to slightly cool, chill in the refrigerator and then it is ready (Chilling the muffins is optional)
