Buckwheat Noodle Dough Recipe

  1. In a bowl, mix both flours and the salt well, then gradually stir in the water with a fork.
  2. Add in more water, if necessary, till the dough is sticky but not damp.
  3. Knead for 3 to 4 min, till smooth.
  4. You can use this doughimmediately since buckwheat has no gluten and, therefore, will not spring backwhen it's rolled.
