Piquant Mayonnaise Recipe
- 2 egg yolks
- 1 teaspoon salt
- 1/4 teaspoon red pepper
- 1/2 teaspoon black pepper
- 1/2 teaspoon mustard
- 1/2 teaspoon Worcestershire
- 1/4 teaspoon warm sauce
- 1 tbsp. lemon juice
- 1 tbsp. vinegar
- 1 pt. salad oil
- 2 tbsp. boiling water
- Put yolks into small bowl; add in all ingredients except oil and water.
- Beat on medium speed till thoroughly mixed.
- Increase speed to medium high slowly add in oil, small amount at a time till mayonnaise begins to thicken.
- Oil can then be added faster.
- When all oil is used, add in boiling water and mix well.
- (Water does away with the oily appearance.)
- Grated onion may be added if you like.
- Don't use plastic bowl for mixing.
