Piquant Mayonnaise Recipe

  1. Put yolks into small bowl; add in all ingredients except oil and water.
  2. Beat on medium speed till thoroughly mixed.
  3. Increase speed to medium high slowly add in oil, small amount at a time till mayonnaise begins to thicken.
  4. Oil can then be added faster.
  5. When all oil is used, add in boiling water and mix well.
  6. (Water does away with the oily appearance.)
  7. Grated onion may be added if you like.
  8. Don't use plastic bowl for mixing.
