Microwave Magic Muffins(6 Muffins; Cooking Time 2 To 3 Minutes)
- 1 c. boiling water
- 1 c. 100% bran cereal
- 1 c. margarine or butter
- 1 1/2 c. sugar
- 2 eggs
- 2 1/2 c. all-purpose flour
- 2 1/2 tsp. soda
- 1 tsp. salt
- 2 c. All-Bran cereal
- 2 c. buttermilk
- 1 c. cranberry-juice cocktail
- 1 c. red wine
- 1/4 c. sugar
- 1 tangerine, quartered
- 1 cinnamon stick
- 2 whole cloves
- 4 firm, ripe pears with stems intact, peeled and cored through bottom end
- 1 lb. boneless, skinless chicken breasts, sliced into thin cutlets
- 1/2 c. plus 2 tsp. reduced-sodium chicken broth
- 1/4 c. chopped onion
- 1/4 tsp. dried thyme leaves
- 1/8 tsp. ground black pepper
- 1 tsp. cornstarch
- 2 tsp. Dijon-style prepared mustard
- 1 tsp. butter
- 1/4 tsp. sugar
- 1 Tbsp. chopped fresh parsley leaves
- In large, shallow microwave-safe dish or glass pie plate, arrange chicken cutlets in a single layer.
- In small bowl, stir together 1/2 cup broth, the onion, thyme and pepper.
- Pour over chicken.
- Microwave, uncovered, on High (100%) 2 minutes. Rearrange cutlets so outside edges are in center.
- Microwave on High 2 to 3 minutes longer or until chicken is cooked through and no pink spots remain.
- With slotted spatula, remove cutlets to warm serving platter or individual plates, reserving cooking liquid.
