Baked Eggplant (Melanzane Al Forno) Recipe
- 3 med eggplants - (abt 3 lbs) stem removed, sliced lengthwise into 1/2" slices
- 1/4 c. extra-virgin extra virgin olive oil
- 4 x garlic cloves thinly sliced Sea salt to taste Freshly-grnd black pepper to taste
- 1/4 c. finely-minced Italian parsley
- Preheat the oven to 500 degrees.
- Place eggplant slices in a single layer on a lightly-oiled baking sheet.
- Brush each slice with the extra virgin olive oil.
- Stud each slice of eggplant with the sliced garlic, embedding the garlic as much as possible into the flesh of the eggplant.
- Season with salt and pepper and bake 20 to 25 min, till soft and golden.
- Remove from oven and allow to cold.
- When cold, sprinkle with parsley and serve.
- This recipe yields 8 servings.
