Loaded Sweet Potato
- 1 medium sweet potato
- 2 tablespoons fat free Greek yogurt
- 1 teaspoon honey
- 2 tablespoons black beans, drained and rinsed
- 1 pinch paprika
- Prick 1 sweet potato with a fork 4 to 5 times.
- Microwave on a paper towel on a microwave-safe plate for 4 to 5 minutes (before cooking, you can also wrap it loosely with plastic wrap to steam it if you don't have a very powerful microwave).
- Split open lengthwise and top with Greek yogurt, honey, black beans, and a pinch of paprika.
